BASMATI RICE PILAF


1Onion,finely chopped
2Tablespoons olive oil or sunfloweroil
2 Cups basmati rice
1Clove garlic
1Cinnamon stick
4Ccups vegetable stock
1Teaspoonsalt
4Tablespoons currants , soaked and drained

Gently cook the onion in the oil until soft but not brown. Add the rice and stir around for a minute or two. Stir in the garlic and cinnamon. Pour in the stock and add the currants . Cover and simmer for 15 minutes or until tender and the liquid absorbed. Check seasoning.
